Chocolate Chip Banana Waffles

Waffles....., I got this waffle machine for my birthday, and then my journey into the creation of waffles began......
I love waffles!, they're easier to make then pancakes and they're basically like a blank canvas ready to painted with delicious toppings!
These waffles are actually healthy but they taste like banana bread but crunchy on the outside and moist on the inside. There are people who say healthy food tastes bad and stuff, but actually it doesn't!
Now for some waffle philosophy, there are two waffles in the world, some loaded with sugar and carbs waiting to be indulged at a special occasion and there are others that are equally delectable though more subtle, aiming to be an everyday occurrence.

If you didn't get any of that don't worry, I promise you will love these crispy banana bread flavoured waffles with gooey chocolate chips* oozing through. Even better, it's good for you! (*Dark chocolate)

If you're a Peanut butter fantic like me, you'll have to spread some peanut butter on top of these, it just makes them a thousand times more delicious


Ingredients:
Serves 3 starving people or 4 people with satisfactory levels of self control

Adapted from Cookie and cake

  • 1½ cup white whole wheat flour (or regular whole wheat flour)
  • 2 tablespoons brown sugar 
  • 2 teaspoons  baking powder
  • ½ teaspoon sea salt
  • 1 tsp cinnamon
  • ¾ cup chopped walnuts
  • ⅓ cup melted coconut oil or organic grass fed cow butter
  • ¾ cup milk of choice (use normal milk for good flavour but coconut milk works just as fine
  • ¾ cup overripe mashed bananas (about 2 small bananas), plus more for topping
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2-3 tbs dark chocolate broken into small pieces
  • Butter, peanut butter, blueberries and honey for topping
1. Preheat oven to 120 degrees, this will help keep your waffles warm when they are cooking one at a time
2. Combine cinnamon, salt,baking powder, brown sugar, flour and chopped walnuts in a rather big bowl
3.Microwave butter and milk in a medium sized bowl for 30-40 secounds or until lukewarm
4.Remove and add in egg, vanilla extract and banana to mixture
5. Combine wet ingredients with dry, then stir in gently chocolate chips
6. Mix until just combined, don't overmix or you'll get dense pieces of cardboard instead of crisp fluffy waffles.
7.Preheat waffle machine and lightly oil. Cook waffles to manufacture's instructions. I cannot give a description as each waffle machine is different. 
8. When waffle is cooked, scooped it out with a spatula and place in the oven
9. When all is done, top with butter, add a dollop of peanut butter, throw on some sliced bananas and blueberries and drizzle with honey. Eat it or it will get soggy.
